Everywhere you turn, restaurants are coming up with different ways to sell fries – several which we’ve seen are Cajun, urban, loaded, chili cheese… the list goes on. We have several potato variations we make ourselves. But one of our favorite new recipes is garlic Parmesan roasted potatoes.
Several restaurants out there call these “urban” style – we call them effing delicious. End. Of. Story.
Ingredients:
Four large potatoes, diced (about 1/2 inch cubes)
2 Tbsp canola or olive oil
1 clove of finely minced garlic
1 Tbsp onion powder
1 Tbsp of chopped parsley
1/4 cup freshly grated Parmesan cheese
1 tsp salt
1 tsp cracked pepper
Preparation:
Dice potatoes, keeping in bowl of water to prevent browning.
Once all potatoes are diced, drain on paper towels to dry.
Put potatoes on large baking sheet and mix oil and seasonings by hand (reserving cheese for final prep) – arrange potatoes in single layer.
Bake at 400 degrees for 30-45 minutes until potatoes are tender, turning once during baking.
Once potatoes are cooked, move potatoes to serving dish – layering Parmesan with each layer of potatoes.
