Southwestern BBQ Totchos

Who doesn’t love BBQ? If you said “me,” we need to evaluate 1) our friendship and 2) your current life plan.

Any time we get BBQ out on the town, we inevitably have leftovers – lots and lots of leftovers. Mainly because we go beast mode like we are gearing up for a sumo match, when we really eat about 1/5th of what we order. Some of our favorites around Atlanta are Community Q in Decatur and Williamson Brothers in Marietta, btw.

This recipe is a quick way to use those leftovers and elevate it into a delicious mountain of food!

Ingredients:

Two servings of tater tots, cooked by directions on container

Leftover BBQ/brisket (however much you have left)

1 ear of corn, grilled

Fresh shredded cheese (whichever kind you prefer)

BBQ sauce

Sliced jalapenos for garnish

Preparation:

After they come out of the over, make a mound of the tots on a plate

Top with warmed leftover BBQ and cheese

Add grilled kernels of corn, cut from the cob

Put under the broiler for about a minute to melt cheese

Top with jalapenos

Drizzle with leftover BBQ sauce

You can also add black beans, peppers, tomatoes, salsa – whatever your heart desires!

Try not to eat them too fast and look like a crazy person… Oh, who cares – dig in!
