Copycat Funky Chicken sandwich

One of our favorite places in Norfolk is hands down No Frill Grill. And their Funky Chicken sandwich. So we crafted our own version!



4 chicken breasts

Herb & Garlic marinade

8 slices of thick-cut bacon

4 slices of Swiss cheese

8 slices of sourdough bread

Homemade Parmesan peppercorn dressing



Marinate chicken breasts in herb & garlic marinade for two hours

Fry bacon, set aside to drain

Take chicken from marinade and grill, 10 minutes per side until done

Toast sourdough bread

Assemble sandwiches with a dollop of dressing on each slice of bread, topped with chicken, cheese and bacon.

Eat up! We like to have a little extra dressing on the side for dipping ;)
