Baked mustard potatoes

Whether you are having steak, chicken or even just a grilled cheese sandwich,  this side dish is sure to please. With only a few ingredients and a set-it-and-forget-it preparation, there is no reason to serve boxed mashed potatoes at your next soiree!

Ingredients:

5 to 6 medium to large russet or golden potatoes

1 packet of dry Lipton Onion Soup mix

3 Tbsp of olive or Canola oil

3 Tbsp of prepared mustard

S&P to taste

Preparation:

Clean and rinse potatoes and cut into 3/4-1″ dice (keep potatoes in bowl of water to prevent browning)

After potatoes are diced, strain from water and dry with paper towels

Add potatoes to large baking sheet

In separate bowl, mix together oil, mustard and soup mix

Cover potatoes with mixture and toss to cover potatoes thoroughly

Arrange potatoes in a single layer and sprinkle with S&P

Cook in 400 degree oven for 45 minutes, turning once

Potatoes are done when fork tender
